Hot Dogs with Sticky Balsamic Onions
we found this recipe for fancified hotdogs in a princess cookbook from the library... doubtful as to whether the kids would appreciate the onions on these dogs we hyped the princess theme from the start. And it worked! the kids enjoyed the dogs as well as the decor!
"a hot dog needs good accompaniments, and kids really love the flavor of red onions cooked in a sitcky balsamic glaze."
Ingredients:
- 2 tbsp. olive oil
- 2 large red onions, thinly sliced
- 1/4 tsp. fresh thyme leaves (optional)
- 2 tbsp. balsamic vinegar
- 1 tbsp. light brown sugar
- salt & pepper
- 4 good-quality hot dogs
- 4 hot dog buns
- ketchup & mustard
Preparation:
- heat the oil in a large frying pan and add the onions (it will look like a lot of onions, but they cook down)
- cook the onions over medium-high heat, stirring frequently, for 15 to 20 minutes, until very soft
- add the thyme, if using, and balsamic vinegar and cook for 2 to 3 minutes, until the vinegar has evaporated
- stir in the sugar until dissolved and season to taste with salt & pepper
- keep warm.
- broil the hot dogs for 4 to 5 minutes on each side, until cooked through.
- lightly toast the buns
- divide the onions among the buns and nestle the hot dogs on top of the onions.
- serve with swirls of ketchup and mustard, and lots of napkins!
Notes:
- i forgot to add the brown sugar, salt & pepper... everyone still enjoyed the dogs!
- i used beef hot dogs.
