this dish has some of the heat and spiciness associated with Cajun blackened fish or chicken, however the flavour of allspice gives it a unique, mouth watering character.
Ingredients:
1 onion finely chopped
1 clove garlic, crushed
olive oil
2 tsp allspice, ground
1 tsp medium heat chili flakes
1 tsp ginger, ground
1/2 tsp freshly ground black pepper
1/4 tsp dry thyme leaves
salt to taste
2 tbsp dark rum
2 chicken breast fillets
Preparation:
fry onion and garlic in oil, add spices, salt and rum
marinate the chicken for up to one hour
either pan-fry, grill or barbecue until cooked through
