lemon halibut with sour cream

a gift from my aunt babara

Ingredients:
- 2 lbs. halibut steaks
- 2 tbsp. olive oil
- 2 tbsp. butter
- 1 bunch green onions, chopped
- 1 medium onion, chopped
- 3 tbsp. fresh lemon juice
- 2 tbsp. lemon rind
- 2 tbsp. fresh parsley, chopped
- 1 cup sour cream
- 2 tsp. curry powder
- salt & pepper to taste
Preparation:
- cut the halibut in serving size pieces
- remove bones
- heat oil and butter in large frying pan and cook
the onions until transparent
- add halibut to pan
- combine lemon juice, rind, parsley, sour cream,
curry powder, salt and pepper
- pour over halibut and simmer for 20 minutes
basting sauce over fish occasionally
- serve hot
- serve on a bed of rice with vegetable
accompaniment
makes 4 servings
