mandarin cheesecake

Ingredients:
15 graham cracker rectangles
1/3 cup unsalted butter
3/4 cup cream cheese, at room temperature
300g can sweetened condensed milk
5 tbsp fresh lemon juice
300g can mandarin segments in natural juice
Preparation:
break up the crackers and put them into a food bag.
push the air out and seal.
crush the crackers with a rolling pin until they are like fine breadcrumbs
gently melt the butter in a saucepan, over a low heat.
turn off the heat and stir in the crushed crackers until they are completely coated with butter
put the flan pan on a baking tray and pour in the cracker mixture
spread the mixture out with the back of a spoon until it evenly covers the base and sides
chill the cracker base for 30 minutes
beat the cream cheese and then add the condensed milk and lemon juice
whick them all together, until smooth
thoroughly drain the mandarin segments
roughly chop them into smaller pieces and then scatter them over the chilled cracker base
pour the filling mixture over the base
use a spatula to spread the mixture and smooth the top
chill for 2-3 hours or overnight to set.
