marinated chicken

Ingredients:
1/2 cup plain yogurt
1 tbsp curry powder
2 tbsp vegetable oil
juice of 1/2 lemon
1 tsp tomato paste
salt and pepper
2 chicken breasts (skinless & boneless)
3 tbsp raisins
3 tbsp flaked almonds
2 tbsp mango chutney (optional)
Preparation:
in a bowl, mix the tomato paste, oil, and curry powder together to make a paste
add the lemon juice and half the yogurt to make the marinade
carefully cut each chicken breast into cubes of about 2.5cm
stir the chicken into the marinade, season with salt and pepper, and cover the bowl
let the chicken marinate in the refrigerator for 30 minutes
place the frying pan over medium to high heat and fry the chicken for 3-4 minutes
the chicken will change colour, but it will not be cooked yet
add the raisins and almonds and cook for 3-4 minutes or until chicken is thoroughly cooked.
serve with leftover yogurt, naan bread and lettuce
