Half the recipes you find out there for mayonnaise sound way complicated but in watching one of our favourite cooking shows (du coeur au ventre) we discovered how easy it is, and tasty too! (and according to M. Pinard, this is a no fail recipe!)

Ingredients:

1 egg
- 1 tbsp dijon mustard (or 1 tsp salt)*
- juice from half a lemon (or 1 tsp wine vinegar)
- about 1 cup of canola oil
Preparation:

Put the egg in the food processor along with 1 or 2 tbsp of dijon mustard according to taste (or if you don't like dijon mustard than a good pinch of salt to promote the emulsion).
- Add about one teaspoon of wine vinegar or juice from half a lemon.
- Start the food processor and run for about one minute, then add the canola oil very slowly until the mixture has the consistency of mayonnaise.
