molasses cookies

recipe from "cape breton pictorial cookbook"
a gift from my aunt babara

Ingredients:
- 1 cup molasses
- 1 cup lard
- 1 tbsp. soda
- 1 tbsp vinegar
- 1 cup brown sugar
- 1 egg
- 2 tsp ground ginger
- 1 tsp salt
- 4 cups flour
Preparation:
- in a heavy saucepan, bring molasses and lard to a boil.
- add soda and vinegar
- combine well and cool
- to cooled mixture add egg, brown sugar and dry ingredients
- mix well and chill for 1 hour
- roll dough thin
- cut in 2 inch (5 cm.) circles
- place on lightly greased cookie sheet
- bake in a 350 degree f oven for 8 - 10 minutes or until crisp
makes 55 servings
