molasses-lime meatballs
these were simply ok... probably wouldn't make them again.
Ingredients:
- 4 eggs
- 1 cup quick-cooking rolled oats
- 1 cup finely chopped green onions (8)
- 4 tsp. Worcestershire sauce
- 1 tsp. crushed red pepper
- 1 1/2 lbs. extra-lean ground beef
- 8 oz. uncooked hot italian flavour turkey sausage
- 6 tbsp. molasses
- 1/4 cup soy sauce
- 2 tbsp. lime juice
Preparation:
- in a large bowl combine eggs, oats, green onions, Worcestershire sauce, and crushed red pepper.
- add ground beef and sausage; mix well.
- shape mixture into 72 meatballs about 2 inches in size.
- coat the inside of a 3 1/2 - or 4-quart slow cooker with cooking spray.
- coat a 12-inch nonstick skillet with cooking spray; heat skillet over medium heat.
- cook meatballs, one-fourth at a time, in hot skillet until brown on all sides.
- transfer meatballs to the prepared cooker.
- cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting for 2 to 2 1/2 hours.
- in a small bowl, whisk together molasses, soy sauce, and lime juice.
- pour over meatballs; toss gently yo coat.
- serve immediately or keep warm, covered, on warm- or low-heat settign for up to 1 hour
Notes:
- i didn't slow cook these, I simply bake them in the oven
- also, I used mild italian pork sausage (since I couldn't find turkey sausage)
