oatmeal butterscotch chip cookies
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tsp. baking soda
- 3 cups old fashioned rolled oats
- 3/4 cups salted butter, softened
- 1 cup granulated sugar
- 1 cup dark brown sugar
- 3 eggs
- 1 pkg. (270g) pc mini butterscotch melts
Preparation:
- preheat oven to 375
- line baking sheets with parchment paper
- into large bowl, sift together flour and baking soda
- stir in oats
- set aside
- in bowl of stand mixer fitted with paddle attachment, cream butter and sugars on medium speed for 5-6 minutes or until butter is light and airy
- one at a time, add eggs, beating well and scraping side of bowl down after each addition
- add dry ingredients; beat on low for 20 - 30 seconds or until combined
- add butterscotch cups; mix on low speed just until combined
- drop, in 2 tbsp. amounts, onto prepared baking sheet, spacing well apart.
- bake, one baking sheet at a time, in centre of overn for 10 - 12 minutes or until golden
- cool on baking sheet
- store in an airtight container for up to four days.
