orange crunch cookies

We have a bunch of kids' cookbooks and every now and then Rubby will pull them out to do some cooking or baking with the kids.  Here Rubby and the kids were quite excited to try these orange crunch cookies but they were a bit of a disappointment as they were much more difficult and much less tasty than anticipated!

Ingredients:

• 1 cup self-rising flour
• 1/4 cup unsalted butter, diced + extra for greasing
• 1/3 cup soft dark brown sugar
• 1 tsp orange zest
• 1/2 egg yolk (beaten)
• 1 tbsp honey
• 1 cup icing sugar (sifted)
• 3 tbsp fresh orange juice

Preparation:

• Preheat the oven to 180 C (350 F). 
• Sift the flour into a bowl and rub the diced butter into the flour, until the mixture looks like breadcrumbs.
• Using a table knife, stir the sugar, orange zest, honey, and egg into the flour and butter, until the mixture starts to come together in lumps.
• Use your hands to bring the lumps together to form a smooth ball of dough.
• Knead the dough iand then lightly flour the work surface.  (Knead until not crumbly)
• Roll the dough into a log, about 5 cm in diameter and 10 cm long.
• Wrap the log in plastic wrap and chill it for 1 1/2 hours, or until firm.
• lightly grease 2 baking sheets with butter.
• Slice the log into 20-24 discs and place the cookies on teh baking sheets.
• Bake for 7-9 minutes.
• Remove the cookies from the oven.
• Allow them to set and put them on a rack to cool.
• Beat the sugar and orange juice until they form a smooth paste.
• Carefully transfer the cookies to a cooling rack.
• Put the icing into a piping bag and drizzle it over the cooled cookies in your favourite patterns.
