oven-barbecued asian chicken
Ingredients:
- 1 bunch scallions
- 1/4 cup hoisin sauce
- 1 tbsp reduced-sodium soy sauce
- 1 tbsp minced fresh ginger
- 1 tbsp minced garlic
- 1 tsp Asian hot sauce* (or to taste)
- 1/4 tsp Chinese five-spice powder
- 4 bone-in chicken thighs, skin removed and trimmed**
- 4 chicken drumsticks, skin removed and trimmed**
- 1 1/2 tsp toasted sesame seeds
Preparation:
- Preheat oven to 350F.
- Line a 9x13 inch baking dish with parchment paper.
- Thinly slice the greens of the scallions; set aside. Finely dice the whites.
- Whisk the scallion whites, hoisin sauce, soy sauce, ginger, garlic, hot sauce and five-spice powder in a large bowl.
- add chicken and toss to coat.
- Arrange the chicken in an even layer in the prepared baking dish, meatier side down.
- Pour any remaining sauce from the bowl over the chicken.
- Bake, turning once halfway through so the meatier side is up, until inner meat is 165F, about 1 hour.
- Transfer the chicken onto a serving platter and top with any remaining sauce form the baking dish.
- Sprinkle with sesame seeds and the reserved scallion greens.
Notes:
- *we used a chili paste sauce
- **we used all chicken thighs and didn't bother removing the skins
