pecan pie

Prepared: 2005-03-28

Ingredients:

• 1 unbaked 9-inch single crust pie shell
• 3 eggs
• 3/4 cup packed brown sugar
• 3/4 corn syrup
• 2 tbsp butter, melted
• 1 tsp. vanilla
• 1 1/2 cups pecan halves
• 2 tbsp corn syrup, warmed (glaze)

Preparation:

• in a bowl, stir together eggs, brown sugar, corn syrup, butter and vanilla
• stir in pecans
• pour into pie shell
• bake in bottom third of 375 f oven for 40 to 45 minutes or until pastry is golden and filling is just firm to the touch, shielding edge with foil if browning too quickly
• brush filling with corn syrup; let cool
• cut with serrated knife
