pickled beets

Ingredients:
3 cups cider vinegar
3 cups sugar
3 cups beet water, strained
1 1/2 tbsp. salt
1 1/2 tsp. ground allspice
3 tbsps. whole clove in cheese cloth
Preparation:
boil a big pot of beets for 20 - 30 minutes
test a beet under running water to make sure the skin comes off easily
bring ingredients to a boil for 5 minutes
remove spice bag
pour juice over the cut up beets in jar.
