red beet chocolate cake

Ingredients:
1 ¾ cups flour
½ teaspoon salt
3 eggs
1 ½ cups beets, pureed
1 teaspoon vanilla extract
1 ½ teaspoon baking soda
1 ½ cups sugar
1 cup vegetable oil
2 oz unsweetened chocolate
a sprinkle of confectioners' sugar
Preparation:
preheat oven to 350 degrees F
melt and cool your baking chocolate, which likely came in 1 oz squares
sift together the flour, baking soda and salt; set aside
combine sugar, eggs, and oil in a mixing bowl
beat with an electric mixer set at medium speed for 2 minutes
beat in the beets, cooled chocolate, and vanilla
gradually add dry ingredients, beating well after each addition
pour into greased 13x9x2-inch baking pan and bake in preheated oven for 25 minutes or until the cake tests done
cool the pan on a rack
they recommend covering it and letting it stand overnight to "improve flavor" but we found it tasty right away.
sprinkle it with confectioners' sugar and serve.
