red potatoes and sugar snap peas

Ingredients:
- 8 red potatoes (small)
- 250g sugar snap peas or snow peas
- 1 tbsp extra-virgin olive oil
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 green onions (sliced)
Preparation:
- cut potatoes into quarters
- trim peas
- in pot of boiling salted water, cook potaotes just until tender, about 15 minutes
- add peas; cook for 2 minutes
- drain and place in bowl
- add olive oil, lemon juice, salt, pepper and green onions
- toss to coat
makes 4 servings @ 135 calories per serving
