rhubarb banana crumble

Ingredients:
- 5 cups fresh or thawed rhubarb
- 1/3 cup granulated sugar
- 2 tbsp. all-purpose flour
- 3 bananas
- 1/4 cup quick-cooking rolled oats
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 tsp. cinnamon
- 1/3 cup cold unsalted butter, cubed
- 1/4 cup walnuts, chopped
- 1/4 cup pine nuts (if desired)
Preparation:
- in bowl, combine rhubarb, granulated sugar and 2 tbsp. all-purpose flour
- scrape into greased 8-inch square glass baking dish
- cover with foil
- bake in 400F oven, stirring once, until tender-crisp, about 25 mintues
- arrange bananas, sliced, over top
- meanwhile, in bowl combine rolled oats, flour, granulated and brown sugar and cinnamon
- with fingers, blend in butter, until crumbly
- mix in walnuts and pine nuts
- scatter over bananas
- bake, uncovered, in 350f oven until bubbly and crumble is golden, about 25 minutes
Notes:
- Before removing crumble from oven, set oven to broil until topping is browned.
- Let stand half an hour after baking for the crumble to set.
- Best served warm with vanilla ice cream.
