rhubarb-orange coffeecake

Ingredients:
topping:
1/4 cup brown sugar
1 tbsp orange peel, finely grated
1/2 tsp cinnamon
cake:
2 cups all-purpose flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg
1 tsp vanilla
1/3 cup melted butter
1 cup orange juice
1 1/2 cups rhubarb, chopped
Preparation:
pre-heat oven to 350 f
butter an 8 inch square baking pan
combine brown sugar, orange peel and cinnamon for topping and set aside
stir together flour, sugar, baking powder, baking soda, and salt in large bowl
in another bowl, lightly beat egg
blend in vanilla, butter and orange juice
pour egg mixture into dry mixture and stir just until evenly combined
spread half in prepared pan
top evenly with rhubard
spoon remained batter on top and spread evenly
sprinkle topping over surface
bake about 40 minutes or until toothpick comes out clean
cool on rack
