roasted sweet potato wedges

ingredients:
- 4 sweet potatoes
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp vegetable oil
Preparation:
- Scrub 4 sweet potatos.
- Cut each lengthwise into 8 wedges.
- In bowl, toss together potatoes, oil, salt and pepper.
- Roast on large rimmed baking sheet in 400F (200C) oven, turning once, until tender, about 20 minutes.
Makes 8 servings @ 185 calories per serving.
Notes:
To avoid wedges sticking, place wedges with peel side down on baking sheet. This also means you don't have to turn them halfway through.
