seafoam frosting
Growing up I had a friend who's mom always made birthday cakes with seafoam icing and I remembered really liking the light and fluffy texture. I finally decided to find a recipe for it and try it. Pretty easy although in my haste I forgot to add one of the egg whites... it still came out ok and quite tasty. For my first attempt I used 1/2 tsp almond extract for flavouring and 1/2 tsp red food colouring to make it nice and pink. (After all, it was for a princess cake!)
Ingredients:
- 2 egg whites
- 1 1/2 cups dark brown sugar
- 1/3 cup water
- 1 tsp vanilla *Can modify flavouring as desired
Preparation:
- Stir together egg whites, sugar and water together in top of double boiler.
- With water boiling in bottom of double boiler, beat with electric mixer approximately 7 minutes or until frosting looks fluffly and holds soft shape.
- Remove from water, add vanilla and beat until frosting forms stiff peaks.
- Use to frost.
Notes:
- Don't over-cook, it will become grainy.
- You can substitute dark brown sugar with light brown sugar or white sugar and then add 1 tbsp light corn syrup.
- Some recipes also include a bit of cream of tartar to give the final iced cake a thin "crust" when the icing sets.
