stir-fried bean sprouts
"this is an easy way to cook up some tasty bean sprouts in a wok. it is not necessary to trim them. simply rinse in a bowl of cold water and discard and husks that float to the surface"
Ingredients:
- 2-3 scallions
- 2 tbsp. vegetable oil
- 2 cups bean sprouts
- 1 tsp. salt
- 1/2 tsp. light brown sugar
- few drops of sesame oil (optional)
Preparation:
- cut the scallions into short sections about the same length as the bean sprouts.
- heat oil in a wok and stir-fry the bean sprouts and scallions for about 1 minute.
- add the salt and sugar and continue stirring for 1 minute.
- sprinkle with the sesame oil, if using, and serve.
- do not overcook, or the bean sprouts will become soggy
