cinderella birthday cake
I was having a hard time deciding on a theme for my niece's birthday this year so I decided to make a princess cake and had Samantha help me pick out the princess. We checked out all the princess polly pockets at Walmart and Samantha decided on Cinderella and we went with the pink dress that the animals had originally made her. Since it was for the family portion of the party, I decided to up the quality of the icing and decorations by using a mousse filling with raspberries, seafoam icing, and berries around the cake.
Ingredients:
- 1 box chocolate cake mix
- 1 package of Oetkers strawberry mousse
- raspberries for filling and decoration
- blueberries for decoration
- 1 recipe seafoam frosting (coloured pink and almond flavoured)
- 1 cup of white vanilla icing
- gold candy balls (aka "edible ball bearings")
- pink sprinkles
- toppers (1 Cinderella, 2 mice, 1 spool, candles)
Preparation:
- Prepare cake mix as per instructions and bake in 2 heart shaped cake pans.
- Let cool.
- Prepare strawberry mousse as per instructions.
- Prepare seafoam icing.
- Pipe a "dam" of seafoam icing around the edge of the top of one of the hearts.*
- spread strawberry mousse inside the dam and place raspberries into the mousse.
- Cover with second layer of cake.
- Ice the cake with rest of seafoam icing.
- Pipe name on top of cake along with scalloped edges and flowers along the border.
- Put icing on spool, place spool on cake with a mouse on top and pipe a thread coming from the spool to the name.
- Add gold candy balls to make centers of flowers.
- Add rest of toppers, add pink sprinkles around princess and place berries all along the bottom of the cake edge for decoration.
Notes:
- I didn't think of putting the dam of icing and so the mousse ended up squishing out the sides a bit and mixing with the icing which caused a bit of a landslide on one side as the cake sat in the fridge.
- oops! That's why I always keep the extra icing for last minute touch-ups and repairs! The berries also helped to cover up the messy bottom.
