Hoisin-Glazed Meat Loaf

ingredients:
- 2 eggs
- 2 cups fresh bread crumbs (500 mL)
- 2 cups grated carrots (500 mL)
- 4 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup thinly sliced green onions
- about 6) (250 mL)
- 2 lb lean ground pork (1 kg)
- 1/4 cup hoisin sauce (50 mL)
Preparation:
- In large bowl, whisk eggs.
- Mix in bread crumbs, carrots, garlic, ginger, salt, pepper and 3/4 cup (175 mL) of the green onions.
- Mix in pork.
- Pack into 8- x 4-inch (1.5 L) loaf pan, mounding top.
- Spread hoisin sauce over top.
- Roast in 400F (200C) oven until meat thermometer registers 160F (71C), about 1 hour.
- Sprinkle with remaining green onions.
Makes 8 servings @ 300 calories per serving.
